Underneath the colour it is the same glove as every other pair: suede-like palm, four-way stretch spandex upper, touchscreen conductive fingertips.
This is the practical argument for a bright glove. Hands are what a viewer watches on a sim racing stream, and black gloves on a black rim are close to invisible on camera. Yellow makes your inputs legible.
It is the same reason broadcast motorsport favours contrasting gloves. If nobody is watching, this is purely a taste decision and there is nothing wrong with that either.
Being honest about the trade: a pale glove shows marks. A silicone or Alcantara rim transfers onto the palm, and on yellow that is visible in a way it is not on black. They wash at 30 degrees, which handles most of it, but they will not stay showroom fresh the way the blacked out pair does.
